30 fluid ounces chicken broth , or more as needed
1 pound cubed beef stew meat
2 potatoes , chopped
12 ounces crimini mushrooms , chopped , or more to taste
1 large beet , chopped
1 large red onion , chopped
8 large red kale leaves , stalks removed and discarded and leaves chopped
1/2 can chipotle peppers in adobo sauce
1 jalapeno pepper , seeded and minced
2 tablespoons garlic , minced
1 bunch fresh sage , leaves removed and stems discarded
1 bunch fresh dill , leaves removed and stalks discarded
2 bay leaves
1/4 cup sour cream , or as desired
Despite its name, Southern Borscht has little in common with the traditional Russian and Ukrainian beet soup of the same name. Instead, this recipe takes classic Southern ingredients like beef stew meat and potatoes and combines them with hearty vegetables like beet, mushroom, and kale to create a rich, earthy soup with a spicy kick. Perfect for a cozy night in, this soup pairs well with crusty bread and a glass of red wine for the ultimate comfort meal.

Instructions

1.In a large pot, bring the chicken broth to a boil over medium-high heat.
2.Stir in the beef stew meat and potatoes.
3.Reduce heat to medium and add the crimini mushrooms, chopped beet, chopped red onion, jalapeno pepper, minced garlic, chipotle peppers in adobo sauce, bay leaves, and all but a few leaves of each of the fresh herbs (reserve those for garnish).
4.Simmer the soup for at least 1 hour, or until the beef is cooked through and the vegetables are tender.
5.Stir in the chopped red kale and the remaining fresh herbs, cooking for an additional 5 minutes to allow the kale to wilt.
6.Remove the bay leaves and serve hot, with a dollop of sour cream on top if desired.
