Dirty Rice is a Louisiana Creole dish that has its roots in West African cuisine. Traditionally made with chicken livers, this recipe uses ground beef for a savoury and satisfying twist on the classic. The dish gets its distinct flavour from cajun seasoning, a blend of spices that includes paprika, cayenne pepper, garlic powder, and more. While this recipe uses canned soups, it can also be made from scratch to control the sodium content. Serve as a standalone meal or as a side dish to other Creole-inspired dishes.

Instructions

1.In a skillet, cook ground beef over medium heat until browned, breaking it up into small pieces as it cooks.
2.Add in the chopped green pepper, minced jalapeno, and chopped onion and cook for another 5 minutes.
3.Drain any excess fat from the skillet and stir in raw rice.
4.Add the cream of chicken soup, French onion soup, water, cajun seasoning, thyme, and hot sauce.
5.Bring the mixture to a boil, then reduce heat to low, cover the skillet, and let it simmer for around 25 minutes, or until rice is cooked and liquids have been absorbed.
6.Garnish with chopped green onions and serve hot.
