Ingredients

2 cups long-grain rice
1 cup dried kidney beans
1 onion , finely chopped
1 scotch bonnet pepper , finely chopped
1/4 cup bacon , cut into small cubes
1 tablespoon butter
2 garlic cloves , minced
2 tablespoons vegetable oil
salt , to taste
fresh ground pepper , to taste
Diri et pois coles, also known as rice with kidney beans, is a staple dish in Haiti and the Caribbean. This hearty dish is made with long-grain rice, dried kidney beans, and a variety of spices to create a flavorful and filling meal. The dish is traditionally served with plantains, avocado, or a side of salad. Instructions

1.Soak the dried kidney beans in water overnight.
2.In a large pot, heat the vegetable oil over medium-high heat.
3.Add the chopped onion, minced garlic, and bacon cubes. Cook for 5 minutes or until the onions are translucent and the bacon is crispy.
4.Drain the kidney beans and add them to the pot along with 4 cups of water. Bring to a boil.
5.Reduce heat to low and let simmer for 30 minutes.
6.Add the rice, scotch bonnet pepper, butter, salt, and pepper. Stir well.
7.Cover the pot and let simmer over low heat for 20-25 minutes or until the rice is cooked through.
8.Stir the rice and bean mixture once more to combine all the ingredients.

PROS

This dish is a great source of vegetarian protein and fiber from the kidney beans.

It is also a filling and satisfying meal that can be enjoyed as leftovers.

CONS

The scotch bonnet pepper can be very spicy and may not be suitable for all tastes.

Also, the bacon cubes may not be appropriate for vegetarians or those following a halal or kosher diet.
