3/4 cup butter , softened ( no substitutes ! )
1/4 cup sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1 cup flaked coconut
1 1/2 cups semi-sweet chocolate chips
1 tablespoon shortening

Instructions

1.Preheat oven to 350°F.
2.In a large bowl, beat butter, sugar and vanilla extract until creamy.
3.In another bowl, combine flour and baking powder. Gradually add to creamed mixture and mix well.
4.Stir in coconut.
5.Press the mixture into a 9 inch square baking pan. Bake for 20-25 minutes or until lightly browned. Cool on a wire rack.
6.In a microwave-safe bowl, melt chocolate chips and shortening; stir until smooth.
7.Spread over cooled shortbread.
8.Allow it to set for a few minutes. Then cut into bars, enjoy!
