Ingredients

2 lamb fillets
1 tablespoon Dijon mustard
6 tablespoons olive oil
9 ounces French lentils , rinsed
3 garlic cloves , crushed
1 tablespoon fresh marjoram
1 tablespoon fresh basil leaf
2 tablespoons fresh mint leaves
1 1/2 lbs swiss chard leaves
1/2 tablespoon lemon juice
1 pinch salt & freshly ground black pepper
Dijon Lamb with Herb Lentils and Greens is a mouth-watering main course that is easy to make and sure to impress your friends and family. This dish is a perfect combination of Dijon mustard, lamb fillets, French lentils, and Swiss chard. The herbs add another level of flavor that makes this dish unique and enjoyable. Instructions

1.Preheat the oven to 400°F.
2.Season the lamb fillets with salt and pepper.
3.Heat 2 tablespoons of olive oil in a skillet over high heat. Once hot, sear the lamb fillets until browned on all sides.
4.Remove the lamb from the heat and coat with Dijon mustard. Place the lamb fillets in the oven and cook for 10-15 minutes, or until medium-rare.
5.In a separate pot, bring 2 cups of water to a boil. Add the lentils and reduce heat. Cover and let simmer for 20-25 minutes, or until tender.
6.In another skillet, heat the remaining olive oil over medium heat. Add garlic and cook until fragrant.
7.Add the cooked lentils to the skillet. Add marjoram, basil, mint, lemon juice, salt, and pepper.
8.In a separate pot, bring lightly salted water to a boil. Add chard leaves and cook until tender. Drain the water and set the chard leaves on a platter.
9.Serve the lamb fillets on top of the chard leaves, along with the lentils mixture.
