2 lbs small white potatoes or 2 lbs yukon gold potatoes , unpeeled
2 tablespoons cider vinegar
1 cup celery , thinly sliced
6 green onions , white and green , thinly sliced
1 teaspoon dill weed
1 teaspoon kosher salt
1/4 cup bread and butter pickles , chopped
3 hardboiled egg , sliced and chopped
2/3 cup non-fat Greek yogurt
2 tablespoons low-fat mayonnaise
fresh ground pepper

Instructions

1.Boil the unpeeled potatoes in a large pot of salted water until tender. Drain and let cool.
2.Cut the potatoes into bite-sized pieces and transfer to a large mixing bowl.
3.Add the cider vinegar, sliced celery, chopped green onions, dill weed, kosher salt, chopped pickles, and sliced hardboiled eggs to the bowl. Toss to combine.
4.In a separate bowl, whisk together the Greek yogurt, low-fat mayonnaise, and fresh ground pepper.
5.Pour the yogurt mixture over the potato mixture. Mix until well combined.
6.Serve chilled.
