Ingredients

2 1/2 2 1/2 lbs pork or 2 1/2 lbs chicken
1 cup salsa , good quality
1 medium yellow onion , chopped well but not fine
2 -3 cloves garlic , minced
1 jalapeno , roasted peeled , seeded and minced
1 poblano chile , roasted peeled , seeded and minced ( use 2 if on the small side )
1 red sweet bell peppers or 1 yellow sweet bell pepper , roasted , seeded and chopped well
1/2 lb cremini mushroom , chopped well
1 - 1 1/2 lb monterey jack cheese , cut into small cubes 1/4 inch square
1 package thawed phyllo dough
1/2 cup olive oil or 1/2 cup canola oil
guacamole
salsa
chopped onion
sour cream
shredded lettuce
sliced black olives
shredded cheese
diced green chilis ( that sort of thing , what ever lights your candle )
Diana's Mexican Fila Rolls is an ideal dish for families who want to enjoy a different take on a classic recipe. Instructions

1.Preheat the oven at 375°F (190°C).
2.In a pan, cook ground meat until browned.
3.Add Salsa, onion, garlic, jalapeno, poblano chile, bell pepper and mushroom to the same pan and sauté for 15 minutes.
4.Grease baking sheet with olive oil.
5.Lay down one phyllo dough sheet and brush with olive oil, do this with 3 more sheets.
6.Place 1/3 cup of filling over the layered phyllo squares and top with 2 to 4 cubes of cheese (1/4-inch square).
7.Roll tightly, like a burrito, do this until all stuffing is over.
8.Brush the top with olive oil
9.Repeat all steps using the remaining phyllo sheets and stuffing.
10.Bake in preheated oven for 10-15 minutes or until it's golden brown.
