6 egg yolks
1 whole egg
1 cup sugar
3 cups heavy cream
3 vanilla beans
1/4 lb butter

Instructions

1.Preheat the oven to 325°F.
2.In a mixing bowl, whisk together the egg yolks, whole egg, and 1 cup of sugar until light and fluffy.
3.In a saucepan, heat the cream and vanilla beans over medium heat until it comes to a simmer.
4.Remove from heat and let it sit for 10 minutes.
5.Strain the cream and add it to the egg mixture, whisking well.
6.Melt the butter in a small saucepan over medium heat, then add to the egg mixture.
7.Divide the mixture evenly among 6 ramekins or custard dishes.
8.Place the ramekins in a baking dish and add hot water to the baking dish, being careful not to pour any water into the ramekins.
9.Bake for about 45 minutes, or until the custard is set but still jiggles in the center.
10.Remove from the oven and let them cool down to room temperature.
11.Place the ramekins in the refrigerator for at least an hour, or until the custard sets.
12.Sprinkle 1 tablespoon of sugar on top of each custard and torch it to create a caramelized top.
13.Put the custards back in the fridge for at least 10 minutes before serving.
