Instructions

1.Cut the potatoes, eggplants and green peppers into bite-sized pieces.

3.Heat the olive oil in a wok or large frying pan over high heat. Add the garlic, ginger (if using) and onion and stir fry for 1-2 minutes until fragrant.
4.Add the potatoes and stir fry for 2-3 minutes until starting to soften. Add 1/2 cup of water, cover the wok and simmer for 5-7 minutes until the potatoes are almost tender.
5.Add the eggplant and stir fry for 2-3 minutes.
6.Finally, add the green peppers and the sauce mixture. Stir fry for another 2-3 minutes until everything is cooked through and coated in the sauce. Serve hot over rice.
