Ingredients

6 ounces plain flour
3 ounces gram flour
2 ounces ghee ( pared off the block in flakes , for preference )
1/2 teaspoon salt
warm water
4 ounces cooked flaked salmon
3 cooked potatoes
3 ounces cooked sweetcorn
1 teaspoon finely chopped ginger
2 teaspoons finely chopped chilies ( adjust to taste , green or red - I prefer red )
2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
oil , to fry
Deni's Delicious Salmon and Sweetcorn Samosas are a modern twist on the traditional Indian snack. These samosas are crispy on the outside, with a savoury filling of flaked salmon, potatoes and sweetcorn, flavoured with ginger, chilies and a blend of aromatic spices. It's a quick and easy snack to make, great for entertaining friends and family or for a quick bite on the go. These samosas can be served as an appetizer, snack or even a light lunch. Enjoy them hot with your favourite dipping sauce.

Instructions

1.In a mixing bowl, combine the plain flour, gram flour, ghee and salt together. Mix well.
2.Gradually add in the warm water, mixing with your hands, until you get a smooth dough. Cover and let it rest for at least 30 minutes.
3.In another bowl, combine the cooked salmon, potatoes, sweetcorn, ginger, chilies, garam masala, ground cumin and ground coriander together. Mix well and set aside.
4.Roll out the rested dough into thin strips. Cut the strips into rectangular pieces approximately 12cm by 8cm.
5.Place a tablespoon of the salmon mix in the centre of each rectangular piece of dough.
6.Fold the dough over to make a triangular shape. Seal the edges by using a little bit of water.
7.Heat up some oil in a pan and fry the samosas until golden brown.
8.Serve hot with your favourite dipping sauce.
