Ingredients

12 fat asparagus spears or 36 thin asparagus
12 slices white bread , buttered , crusts removed
100 g fresh raw salmon , boned and skinned and thinly sliced
12 slices meyer lemons ( very thin slices )
1 lemon , extra
1/2 teaspoon fresh ground black pepper

Instructions

1.Preheat the oven to 180°C.
2.Blanch the asparagus in salted boiling water for 1 minute.
3.Drain the asparagus and plunge it into ice-cold water.
4.Drain and pat dry.
5.Discard the crusts from the white bread and flatten each slice with a rolling pin.
6.Place 3 asparagus spears (or 9 thin spears) along one edge of each slice of bread.
7.Top each slice of bread with a slice of salmon and a slice of meyer lemon.
8.Season with pepper.
9.Roll up tightly and place seam-side down on a baking sheet.
10.Brush with lemon juice.
11.Bake for 10-12 minutes or until golden brown.
12.Serve hot or at room temperature.
