200 g baby courgettes , quartered
25 g butter
4 -5 teaspoons sun-dried tomato olive basil rub
2 teaspoons olive oil
4 trout fillets
1 lemon , sliced
boiled new potato , to serve

Instructions

1.Preheat the oven to 200°C fan.
2.In a frying pan, sauté the quartered baby courgettes in butter until soft and golden.
3.Rub sun-dried tomato olive basil rub on to the trout fillets.
4.In a separate frying pan, heat the olive oil over a high heat and then quickly fry the trout fillets, skin-side down, for 2 mins until crispy.
5.Transfer the trout fillets onto the courgettes.
6.Add lemon slices onto each trout fillet.
7.Cook in the oven for around 15 minutes, or until trout is cooked through.
