1/2 cup ketchup , divided

5 teaspoons dried parsley
1/4 teaspoon cumin
1 can tomato paste
12 saltine crackers , crushed
20 vegetable crackers , crushed ( I used Kraft Vegetable thins )

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.In a skillet over medium heat, sauté chopped onion and minced garlic in olive oil until soft.
3.In a large mixing bowl, combine sautéed onion and garlic with lean ground turkey, large egg, Worcestershire sauce, 1/4 cup of ketchup, salt, black pepper, chili pepper, dried parsley, cumin, tomato paste, and crushed crackers.
4.Mix until thoroughly combined and transfer to a greased loaf pan.
5.Spread remaining 1/4 cup of ketchup on top.
6.Bake for 45-50 minutes or until internal temperature reaches 165 degrees Fahrenheit.
7.Let the turkey loaf stand for 5-10 minutes before slicing and serving.
