1 beef tongue
1 tablespoon beef bouillon , I use caldo de res
1 large yellow onion , quartered
6 shallots , halved
6 garlic cloves , mashed
2 bay leaves
1 teaspoon coarse black pepper
1 teaspoon white pepper
1 tablespoon kosher salt
water , to cover
1 bunch cilantro , chopped
1 bunch scallion , chopped
1 serrano chili , minced
1 jalapeno chile , minced
3 roma tomatoes , chopped
1 avocado , mashed ( Fuerte has best flavor & texture )
flour tortilla
3 limes
salt & pepper

Instructions

1.Rinse the beef tongue and place it in a slow cooker.
2.Add beef bouillon, quartered onion, halved shallots, mashed garlic, bay leaves, black pepper, white pepper, and kosher salt.
3.Add enough water to cover the beef tongue.
4.Cook on low for 8-10 hours or until the beef tongue is tender.
5.Remove the beef tongue from the slow cooker and let it cool down.
6.Peel off the outer skin, trim off any fat, and chop the beef tongue into small pieces.
7.In a large bowl, mix together chopped cilantro, chopped scallion, minced serrano chili, minced jalapeno chili, chopped roma tomatoes, and mashed avocado.
8.Season with salt and pepper to taste.
9.Heat the flour tortilla on a hot skillet until warm.
10.Add the chopped beef tongue and the tomato-avocado mixture on top of the tortilla.
11.Add some Mexican blend cheese and squeeze some lime juice on top.
12.Fold the tortilla and enjoy!
