Ingredients

1 roasted whole chicken ( either bought from the grocery store or home baked )
24 corn tortillas ( I like white , use more or less depending on the chicken )
28 ounces green enchilada sauce ( I use La Victoria )
4 ounces canned diced green chiles
3 cups Mexican blend cheese ( more or less , depending how cheesy you like it )
1 teaspoon basil
1 teaspoon Mexican seasoning ( use judgment since chicken sizes vary )
salt and pepper
2 cups vegetable oil ( use more or less )
Chicken enchiladas are a popular and classic Mexican dish that you can easily make at home. This recipe features tender shredded chicken, wrapped tightly in soft corn tortillas, and topped with a flavorful green enchilada sauce. Instructions

1.Preheat oven to 375°F.
2.Warm the enchilada sauce over low heat.
3.Heat oil in a frying pan over medium-high heat.
4.Fry tortillas one at a time, until they become soft.
5.In a separate bowl, mix together diced chicken, basil, salt, pepper, and Mexican seasoning. Set aside.
6.Spread a thin layer of green sauce on the bottom of a 9x13 inch baking dish.
7.Scoop 2 tablespoons of chicken mixture onto each tortilla and roll up tightly.
8.Place the rolled tortillas seam side down in the baking dish.
9.Pour the remaining green sauce over the enchiladas.
10.Sprinkle the top with diced green chiles and cheese.
11.Bake uncovered for 20-25 minutes or until cheese is melted and golden brown.
