Ingredients

4 tablespoons oil
20 curry leaves

2 large onions ( sliced )
5 garlic cloves ( chopped )
1 tablespoon fresh ginger ( chopped )
1 - 1 1/2 kg pork ( diced )
3 tablespoons ceylon curry powder
2 chilies ( chopped )
2 teaspoons salt
2 tablespoons vinegar
2 teaspoons raw sugar
1 cup hot water
400 ml coconut milk ( tinned )

Instructions

1.Heat oil in a large pan over medium heat
2.Add curry leaves and fenugreek seeds. Fry for 30 seconds

5.Mix ceylon curry powder, chilies, salt and vinegar, and sprinkle over pork.
6.Fry pork for about 10 minutes, stirring occasionally.
7.Add sugar and hot water. Cover and simmer for 30 minutes.
8.Add coconut milk and simmer uncovered for another 15 minutes or until the pork is cooked through. Serve hot with rice or bread.
