Ingredients

1 1/4 lbs shrimp , peeled & deveined
5 ounces lard
1 teaspoon salt
1/2 teaspoon sugar
2 cups fresh breadcrumbs
oil , for deep-frying
1 cup white vinegar
1/2 cup sugar
1 tablespoon cauliflower , finely sliced
1 tablespoon baby corn , finely sliced
1 tablespoon cucumber , chopped
5 bird 's eye chilies ( or any fresh , hot chili )
2 shallots or 2 green onions , finely sliced
Deep-Fried Shrimp Cakes (Taud Man Goong) are a popular Thai street food that can be enjoyed as a meal or an appetizer. Made with finely chopped shrimp and coated in breadcrumbs, these cakes are deep-fried to produce a crispy and savory exterior. Instructions

1.In a food processor, pulse the shrimp until finely chopped.
2.Melt the lard and add it to the shrimp. Add salt and sugar and mix well.
3.Divide the mixture into 8 equal-sized patties and coat with fresh breadcrumbs.
4.Heat oil in a deep-fryer or large pot to 350°F (180°C).
5.Fry the shrimp cakes until golden brown, about 4-5 minutes.
6.In a small saucepan, combine the white vinegar and sugar and bring to a boil. Add cauliflower, baby corn, cucumber, bird's eye chilies, and shallots and cook for 2-3 minutes until the vegetables are tender. Serve alongside the fried shrimp cakes.
