Ingredients

50 spring roll wrappers ( I used frozen )
1/2 lb ground beef
5 large eggs
5 scallions , stalks finely chopped
2 teaspoons salt
2 teaspoons ground coriander
canola oil , for deep frying
1 cucumber , diced
1 large carrot , diced
5 Thai chiles , finely chopped
5 shallots , thinly sliced
3 tablespoons white vinegar
1 teaspoon granulated sugar
1/4 cup water
Deep Fried Beef Rolls (Martabak Telur) is an Indonesian food that is popular as a quick snack or appetizer. It is made of a thin layer of beef and egg mixture wrapped in a spring roll wrapper and then fried until crispy. Traditionally served with a cucumber and carrot salad, this dish is easy to make and tastes great. Instructions

1.In a large bowl, mix the ground beef, chopped scallions, 1 tsp salt, and 1 tsp ground coriander together.
2.Beat 5 eggs in a separate bowl and mix it with the beef mixture.
3.Heat a non-stick skillet over medium heat and add a small amount of canola oil (just enough to coat the skillet).
4.Add 1/4 cup of the beef and egg mixture onto the skillet and spread it out to form a thin layer. Cook for 1 minute.
5.Place a spring roll wrapper on top of the cooked beef and egg mixture. Let it cook for 30 seconds before flipping it over to cook the other side for another 30 seconds.
6.Remove the wrapper and the beef and egg mixture from the skillet and place on a clean, flat surface.
7.Repeat until all the beef and egg mixture is used up.
8.When all the beef and egg mixture is cooked, cut the rolls into small pieces. Serve with the cucumber and carrot salad.
9.Cucumber and Carrot Salad:
10.Combine the diced cucumber, diced carrot, chopped Thai chiles, thinly sliced shallots, white vinegar, granulated sugar, 1 tsp salt, and 1 tsp ground coriander in a bowl.
11.Mix until everything is evenly coated with the dressing.
12.Serve with the deep fried beef rolls.
