Ingredients

2 kg oxtails , chunks
500 ml dry red wine ( use 1 - 2 cups )
1 onion , large , cut into rough chunks
salt
3 garlic cloves , slivered
2 tablespoons Worcestershire sauce
1/2 teaspoon ground cloves
4 tablespoons tomato ketchup
1 tablespoon flour for thickening gravy ( we simply use Bisto )
thyme , extra tomato , chopped parsley

Instructions

1.Preheat the oven to 160°C.
2.Heat a large dutch oven or casserole pan over medium-high heat.
3.Season the oxtails generously with salt. Brown the oxtails in batches, then remove and set aside.
4.Add the onion and garlic to the same pan and sauté until softened.
5.Add the red wine, Worcestershire sauce, ground cloves, and tomato sauce. Bring to a boil and reduce for 5 minutes, stirring occasionally.
6.Return the oxtails to the pot and add enough water to just cover the meat.
7.Bring the stew to a boil, cover with a tight-fitting lid, and transfer it to the preheated oven.
8.Cook the stew for about 3 hours, until the meat is tender and falling off the bone.
9.Remove the oxtails and let the stew sit for a few minutes.
10.Skim off any excess fat from the stew.
11.Mash the tablespoon of flour with a little water to make a paste, then stir it into the stew to thicken the gravy.
12.Sprinkle with freshly chopped parsley and serve with crusty bread or steamed rice.
