1/2 lb skirt steaks or 1/2 lb flank steak

1 cup shitake mushroom ( Coarsely Chopped )

Instructions

1.Rinse the jasmine rice in cold water several times until the water runs clear.
2.In a medium saucepan, combine the rice with water or chicken stock and bring to a boil over high heat.
3.Reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
4.In a small bowl, whisk the eggs together with a pinch of salt and pepper.
5.In a large skillet, heat up 1 tablespoon of olive oil over medium-high heat.
6.Slice the skirt or flank steak into thin strips and season with salt and pepper.
7.Add the steak to the skillet and cook for about 2-3 minutes until browned and cooked to your liking, then remove from the skillet.
8.In the same skillet, heat up another tablespoon of olive oil over medium-high heat.
9.Add the chopped onions and mushrooms to the skillet and cook until softened and lightly browned.
10.Push the vegetables to one side of the skillet, and pour the beaten eggs onto the other side. Scramble the eggs until cooked through, then mix with the vegetables.
11.Serve the rice, steak, and egg mixture together in a bowl, and garnish with ketchup to taste.
