Ingredients

6 ounces self raising flour
2 ounces margarine
2 ounces caster sugar
2 medium eggs
5 tablespoons milk
5 ounces strawberries , conserve
400 -500 g white chocolate
1 package pink icing ( tube )

Instructions

1.Preheat your oven to 180°C (160°C fan)
2.Combine the flour and margarine in a bowl until it resembles bread crumbs. Add the caster sugar, eggs, milk, and 3 oz (85 g) of strawberries to the bowl and mix until well combined.
3.Line a muffin tin with paper cases. Fill each case with the mixture you've prepared.
4.Bake for 15-20 minutes or until the cupcakes are risen and golden. Take them out and let them cool.
5.Melt the white chocolate in a heatproof bowl. Spread over each cupcake, reserve a few spoons of melted chocolate if you want to make decorations.
6.Cut the remaining strawberries into small pieces and scatter over each cupcake. Add the pink icing on top of the strawberries. If you have reserved melted chocolate, pour it over the icing and let it set for a few minutes.
