Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large mixing bowl, sift together the self raising flour and salt.
3.Add in 1/4 cup of sugar, 46 grams of butter, raisins and lemon rind. Combine until mixture becomes crumbly.
4.Gradually, pour in 1/2 cup of milk and stir until the batter is fully incorporated.
5.Grease a baking dish with butter and then transfer the pudding batter into it.
6.In a separate bowl, mix the boiling water, brown sugar and 65 grams of butter and stir until smooth. Then pour over the pudding batter evenly.
7.Place the baking dish in the preheated oven and bake for about 35 minutes or until the pudding is golden brown.
