Ingredients

1 lb hamburger
1 package Velveeta cheese
2 cans Rotel Tomatoes ( or similar brand )
vegetable shortening
20 corn tortillas
6 -8 cups shredded mild cheddar cheese or 6 -8 cups shredded longhorn cheese
1 medium onion , chopped
Debra Jo's Favorite Cheese Enchiladas are a popular Tex-Mex dish enjoyed by many families for dinner. With a cheesy filling made from Velveeta cheese, hamburger, and Rotel tomatoes, these enchiladas are savory and hearty. The tortillas are lightly fried in vegetable shortening for added texture and flavor. Topped with shredded cheddar cheese and baked until bubbly, these enchiladas are a crowd-pleaser for any occasion. Serve with a side of rice and beans for a complete and satisfying meal.

Instructions

1.Preheat the oven to 350°F.
2.Brown the hamburger in a large skillet and drain off any excess fat.
3.Add the Velveeta cheese and Rotel tomatoes to the hamburger and heat until the cheese is melted. Stir constantly to prevent burning.
4.In another skillet, heat the vegetable shortening over medium heat.
5.Quickly dip each tortilla in the hot shortening for 1-2 seconds on each side to soften.
6.Spoon a large scoop of the hamburger and cheese mixture onto one end of the tortilla.
7.Add a sprinkle of chopped onion and shredded cheese.
8.Roll up the tortilla and place it seam-side down in a greased 9x13-inch baking dish.
9.Repeat until all tortillas are filled.
10.Pour any remaining cheese mixture over the top of the tortillas.
11.Sprinkle the rest of the shredded cheese on top of the enchiladas.
12.Bake the enchiladas in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
