1 small onion , chopped
1 teaspoon red crushed red pepper flakes
29 ounces diced tomatoes , drained
10 ounces frozen chopped spinach , thawed and squeezed dry
1 tablespoon fresh basil , minced
1/2 cup parmesan cheese or 1/2 cup romano cheese , grated
salt and pepper
1/4 cup drained pasta water

Instructions

1.Begin by heating the olive oil in a large skillet over medium-high heat
2.Add the garlic, onion, and crushed red pepper flakes to the skillet and sauté for 2-3 minutes or until the onions are translucent.
3.Add the artichoke hearts to the skillet and sauté for an additional 2-3 minutes.
4.Add the diced tomatoes and spinach to the skillet and continue to sauté for another 3-4 minutes.
5.Reduce the heat to low and add the parmesan cheese, basil, and salt and pepper to taste.
6.Add the drained pasta to the skillet and toss to combine, adding some of the reserved pasta water if needed until the pasta is evenly coated and heated through. Serve hot.
