David Lange's Nuclear Free Chicken with Plum Sauce is a recipe inspired by former New Zealand Prime Minister, David Lange. During the 1980s, Lange was a key figure in the anti-nuclear movement and played a major role in making New Zealand a nuclear-free zone. As a nod to his legacy, this chicken dish was named after him and is completely free from any nuclear ingredients. The chicken wings are oven-baked to crispy perfection and served with a tangy plum sauce. Not only is this dish delicious, it's also gluten-free and high in protein. Give it a try and taste the flavors of New Zealand!

Instructions

.Preheat oven to 425°F/220°C.
.Place chicken wings on a baking sheet lined with parchment paper.
.Drizzle oil over the chicken wings and toss to coat.
.Bake for 45 minutes or until golden brown and crispy.
.While the chicken is cooking, make the plum sauce. In a small saucepan, combine the plum jam, garlic, ginger, sugar, soy sauce, lemon juice, and a pinch of fresh ground pepper. Simmer for 5 minutes.
.In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of water to make a slurry. Add the slurry to the saucepan and stir well. Cook for 1-2 minutes until the sauce thickens.
.Once the chicken is done, remove from the oven and let it cool for 5 minutes.
.Serve the chicken wings with the plum sauce on the side.
