Ingredients

500 g white fish fillets , diced into 2cm pieces
500 g hokkien noodles
2 small onions , chopped
2 zucchini , chopped
1 cup sherry wine
1/4 cup oyster sauce
2 tablespoons water

Instructions

1.In a bowl, whisk together cayenne pepper, cornflour, salt, and pepper.
2.Coat the fish pieces in the mixture.
3.Heat peanut oil in a pan and fry the fish pieces until crisp and golden. Remove and set aside.
4.Add onions and zucchini to the pan and cook for 2-3 minutes.
5.Mix in sherry wine and oyster sauce. Simmer until sauce has reduced.
6.In a separate pan, cook the hokkien noodles for about 5 minutes, then drain.
7.Add noodles and fish pieces to the pan with the vegetables, stir well, and cook for 2 minutes.
8.Serve hot and enjoy!
