1 lb chopped dates

1/3 cup brown sugar
1 cup brown sugar
1 cup butter , room temperature ( do not use oil or they will be very crumbly )
1 teaspoon baking soda
1 3/4 cups gluten free rolled oats
1 pinch salt
1 teaspoon non-alcohol vanilla

Instructions

1.Preheat oven to 350°F. Grease a 9-inch square baking dish.

3.Add 1/3 cup brown sugar to the date mixture and stir until sugar is dissolved. Remove from heat and set aside.
4.In a mixing bowl, beat 1 cup of brown sugar and room temperature butter until light and fluffy.
5.In a separate bowl, mix together baking soda, gluten-free rolled oats, and salt. Gradually add dry ingredients to the butter mixture, stirring until combined.
6.Press half of the oat mixture into the bottom of the greased baking dish. Cover with the date mixture, spreading it evenly. Top with the remaining oat mixture, patting it down gently.
7.Bake for 25-30 minutes or until golden brown. Cool completely before cutting into squares.
