Instructions

1.Preheat the oven to 180°C and line a 22 x 10 x 7 cm loaf tin with baking paper.
2.Mix the chopped dates, instant coffee, and crushed ginger in a small bowl with 1 cup of boiling water and let it sit for 10 minutes.
3.In a separate bowl, mix together the self-raising flour and a pinch of salt.
4.Add the date mixture to the flour and mix well until the batter is smooth.
5.Pour the batter into the prepared loaf tin and bake for 45-50 minutes or until a toothpick comes out clean when inserted into the center of the loaf.
6.Let the loaf cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.
