Ingredients

1/4 cup brown sugar
8 fluid ounces heineken dark beer or 8 fluid ounces other dark lager beer
2 tablespoons mustard seeds
2 tablespoons dry mustard
4 fluid ounces cider vinegar
2 shallots , minced
1 teaspoon salt
1/4 teaspoon white pepper
2 egg yolks
2 tablespoons unsalted butter , melted

Instructions

1.Place brown sugar in a bowl and pour dark beer over it, stirring until sugar is dissolved.
2.Combine mustard seeds, dry mustard, cider vinegar, shallots, salt, and white pepper in a separate bowl. Add the beer mixture and whisk until well combined.
3.Beat egg yolks in a small bowl and slowly stir in the mustard mixture, whisking constantly.
4.Microwave the mixture on high for 1 minute and then whisk again. Repeat this step two more times, or until the mixture has thickened.
5.Stir in melted butter and allow the mixture to cool. Once cooled, transfer to a jar or container and refrigerate until ready to use.
