Ingredients

300 g dark chocolate
250 g unsalted butter
4 eggs
2 egg yolks
1/2 cup sugar
60 g plain flour , sifted
40 g Dutch-processed cocoa powder , sifted
1 1/2 cups dried pears , re-hydrated in
Sangiovese Verjuice , and chopped into chunks ( of whatever size you want in your brownies )

Instructions

1.Preheat your oven to 180°C and grease a square 20cm cake tin.
2.Place a heatproof bowl of chocolate and butter over a saucepan of simmering water (don’t let the bottom of the bowl touch the water), stirring occasionally until melted and smooth.
3.Beat the eggs, yolks and sugar until pale and fluffy.
4.Fold in the melted chocolate and butter.
5.Add flour and cocoa, and gently fold until combined.
6.Fold in the rehydrated pears with the verjuice until they are evenly mixed through.
7.Pour the batter into the tin and bake for 20-25 minutes. The brownies should be just set with a slightly sticky centre.
8.Let cool and cut into squares before serving.
