40 g plain flour
25 g molasses sugar
15 g cocoa powder
2 teaspoons mixed spice
1 teaspoon salt
85 g bitter chocolate , 70 % cocoa solids , grated
1 large egg , beaten
227 g clotted cream , to serve
This Dark Chocolate and Cherry Christmas Pudding is a modern twist on the traditional Christmas pudding. It is filled with rich chocolate and fruity flavors and has a moist, dense texture. Instructions

1.Preheat the oven to 180°C
2.Mix the sultanas, currants, raisins, figs, cherries, treacle, olive oil, apple, and whiskey in a large bowl.
3.In a separate bowl, mix the flour, sugar, cocoa powder, mixed spice, salt, and grated chocolate.
4.Add the dry ingredients to the wet ingredients and mix well.
5.Stir in the beaten egg.
6.Grease a pudding basin and line the base with baking parchment.
7.Spoon the pudding mixture into the basin and level the surface.
8.Cover with a layer of baking parchment and a layer of foil, pleated in the middle.
9.Tie string tightly around the rim of the basin to secure the lid.
10.Place the basin in a deep roasting tin and fill halfway up the sides with boiling water.
11.Bake in the preheated oven for 4 hours, topping up with boiling water as needed.
12.Remove from the oven and allow to cool for at least 30 minutes before removing the foil and parchment lid.
13.Turn the pudding out onto a plate and serve with clotted cream.
