Ingredients

8 ounces sultanas

2 ounces stem ginger in syrup , drained and chopped finely or 2 ounces glace ginger , chopped finely
1 largeorange , zest or 1 tablespoon dried orange peel
3 ounces brown sugar
1/4 pint hot darjeeling tea or 1/4 pint hot brewed tea , of your choice
1 egg , size 3 , medium
1 teaspoon ground ginger
8 ounces self raising flour

Instructions

1.Preheat oven to 180°C/350°F/gas mark 4 and line a medium-sized loaf tin with baking parchment.
2.In a bowl, combine all dried fruit, stem ginger, orange zest, brown sugar and hot Darjeeling tea and leave to soak overnight.
3.The following day, beat in egg and ground ginger. Sift in flour and mix well.
4.Pour the mixture into the prepared loaf tin, ensuring it is level, and bake in the oven for 50 to 60 minutes or until a skewer comes out clean.
5.Once removed from the oven, leave to cool in the tin for 10 minutes before removing and placing on a wire rack to cool completely.
