1 cup hazelnuts
1 cup pistachios
1/2 cup sesame seeds
2 tablespoons corander seeds
2 tablespoons cumin seeds
2 tablespoons fennel seeds
1/2 cup peppermint leaf
1/2 cup ground rose petal
1 tablespoon pink himalayan salt
1 tablespoon black pepper
Darcey's Special Dukkah is a Middle Eastern spice blend that originated in Egypt. Its ingredients, including nuts, seeds, and spices, are toasted and then ground together to create a flavorful and versatile mix. Darcey's Special Dukkah can be used as a topping for bread, vegetables, and meats or mixed with olive oil to create a dip. Instructions

1.Preheat the oven to 350°F.
2.Spread the hazelnuts and pistachios on separate baking sheets and roast for 10 minutes. Let cool.
3.In a dry skillet, toast the sesame seeds over medium heat until golden brown and fragrant. Remove from the skillet and let cool.
4.In the same skillet, toast the coriander, cumin, and fennel seeds over medium heat until fragrant, about 2 minutes. Remove from heat and let cool.
5.In a food processor, pulse the cooled hazelnuts and pistachios until coarsely chopped.
6.Add the cooled sesame seeds, toasted spices, peppermint leaves, ground rose petals, pink Himalayan salt, and black pepper to the food processor. Pulse a few times until everything is well combined but still coarsely chopped.
