Ingredients

1/3 cup sugar
1 pint milk , lukewarm
2 compressed yeast cakes
8 cups flour , sifted ( more as needed )
3/4 lb butter
1 teaspoon salt
6 tablespoons butter or 6 tablespoons other shortening , additional
3 eggs , well beaten

Instructions

1.In a bowl, dissolve sugar in milk, then sprinkle the yeast over the milk mixture. Let it sit for 10 minutes till foamy.
2.Gradually stir in the flour until you get a dough and knead it until smooth and elastic.
3.Roll dough out to 1/2 inch thickness, brush softened butter over the entire surface, fold in thirds.
4.Roll the folded dough again, fold in 3s.
5.Let it sit in the refrigerator overnight.
6.Next morning, take the dough out and roll out to 1/2 inch thickness. Fold in thirds, refrigerate for at least 30 minutes.
7.Roll out and fold in thirds for the final time. Rest for around 30 minutes in the refrigerator.
8.Roll out the dough to 1/4 inch thickness, cut into shapes and shape into your favourite pastry shapes.
9.Brush on an egg wash and let rise again for 15 minutes before baking in a 400 degree F oven for 10-15 minutes, until the Danish pastries are golden brown in colour.
