These doughnuts are typically served as a special treat during the holiday season in Denmark. However, they are an excellent addition to any table or a special day. The serving of aebleskivers is usually enjoyed with a warm drink, making them the perfect addition to any afternoon tea or coffee. Overall, they are a lovely light dessert that is easy to make and fun to share with family and friends.

Instructions

1.In a bowl, beat the eggs, buttermilk, and melted butter together until the mixture is smooth.
2.Mix in the all-purpose flour, salt, white sugar, baking soda, and ground cardamom until you get a smooth batter. Cover the bowl and let the batter rest for 30 to 60 minutes.
3.Heat your aebleskiver pan over medium-low heat for a few minutes. Brush the cups of the pan with melted vegetable shortening.
4.Fill the cups of the pan with the batter, almost to the top.
5.Cook the aebleskivers for 2 to 3 minutes, or until the edges start to become golden brown. Using skewers, turn the aebleskivers over in the cups and cook for another 2 to 3 minutes, or until they are golden brown on both sides.
