Instructions

.In a large bowl, mix together the warm water and strong white flour until combined.
.Add the fast action yeast to the flour mixture and mix until combined.
.Add the orange juice, '00' flour, salt, and extra virgin olive oil to the bowl, and mix until all the ingredients are combined and the dough is smooth.
.Knead the dough for 10 minutes on a floured surface, until the dough is smooth and elastic.
.Place the dough into a clean, dry bowl and cover with a clean tea towel.
.Leave the dough to rise in a warm place for 1 hour.
.Preheat the oven to 220°C and prepare a baking tray by lining it with polenta or semolina.
.Press down on the garlic cloves with the flat side of a knife, removing the papery outer layer but leaving the skin on.
.In a small saucepan, add the olive oil and heat over medium-high heat. Add the garlic cloves and cook for 2-3 minutes until fragrant.
.Lower the heat and add the water, balsamic vinegar, caster sugar, salt, and black pepper. Simmer for 15-20 minutes until the liquid has reduced and the garlic cloves are soft and sweet.
.Remove the dough from the bowl and punch it down to remove any air bubbles. Knead the dough briefly on a floured surface.
.Cut the dough in half and shape each half into a ball. Place one ball of dough onto the prepared baking tray and flatten with your hands.
.Spread half of the garlic cloves and a sprinkle of rosemary over the surface of the dough.
.Roll out the second ball of dough and place it over the top of the garlic and rosemary.
.Brush the olive oil over the top of the dough and sprinkle the remaining garlic and rosemary over the surface.
.Place the bread in the preheated oven and bake for 25-30 minutes, or until golden brown and cooked through.
.Allow the bread to cool for a few minutes before slicing and serving warm.
