Ingredients

14 ounces marzipan , Odense 400 g or 14 ounces almond paste , 400 g
300 ml sugar , 180 g
1 1/2 pasteurized liquid egg-whites , 80 g
500 ml powdered sugar , 250 g
1 pasteurized liquid egg-whites
1 tablespoon vinegar
12 ounces bittersweet chocolate or 12 ounces semi-sweet chocolate chips
Kransekage, also known as Danish Wedding Tower, is a traditional Danish dessert that is often served at special occasions such as weddings or Christmas. This tower-shaped cake is made from a mix of marzipan, sugar, egg-whites, and powdered sugar. It is then drizzled with chocolate and served in bite-size pieces.

Instructions

1.Preheat oven to 350°F.
2.Line tartlet rings with parchment paper and place them on a baking sheet.
3.Mix marzipan, sugar, and 1 1/2 egg-whites in a large bowl until a smooth dough forms.
4.Fill the dough into a pastry bag fitted with a large star tip.
5.Pipe dough into the tartlet rings.
6.Bake in the oven for 15-20 minutes until golden brown.
7.Let them cool down.
8.Mix powdered sugar, 1 pasteurized liquid egg-white, and vinegar in a large bowl until a smooth icing forms.
9.Fill the icing into a pastry bag for writing.
10.Drizzle icing over the tartlets, one on top of the other, to form a cone.
11.Melt chocolate in a water bath and drizzle it over the wedding tower.
12.Cool until the chocolate hardens.
