Ingredients

6 fresh herring fillets , cleaned , boned & cut into fillets
1 tablespoon salt
1 teaspoon ground pepper
1/8 teaspoon allspice
3 small onions , finely chopped
2 1/2 ounces white sugar
3 bay leaves
2 tablespoons water
1/2 pint wine vinegar
Danish Rollmops is a traditional Nordic dish made with filleted herring that's been rolled up, marinated, and left to cure for 24 hours. It is often served as an appetizer or a snack, as it's easy to pack and carry.

Instructions

1.Season the herring fillets with salt, pepper, and allspice
2.Roll up each fillet and secure with a toothpick
3.Place the fillets in a shallow dish
4.In a saucepan, mix together the chopped onion, white sugar, bay leaves, water, and wine vinegar
5.Heat the mixture over a medium-low heat for 10 minutes, stirring occasionally
6.Once cooked, let the mixture cool to room temperature
7.Pour the cooled mixture over the herring fillets in the dish
8.Cover with cling film and refrigerate overnight
9.Serve chilled.

CONS

Herring is a high purine fish, it may cause problems for people who suffer from gout.
