3 eggs
1 1/2 cups 1 % low-fat milk
1 tablespoon oil , for pan frying

Instructions

1.In a mixing bowl, sift together flour, sugar, salt, and cardamom or lemon peel.
2.Beat eggs in another mixing bowl until frothy and stir in low-fat milk.
3.Gradually whisk flour mixture into egg mixture until smooth.
4.In a non-stick skillet over medium-high heat, heat a small amount of oil.
5.Pour about 2 tablespoons of batter into the skillet, or enough to make a thin pancake.
6.Cook until lightly browned, about 1 minute.
7.Flip and cook the other side for about 30 seconds.
8.Repeat with remaining batter.
9.Serve with your favorite toppings such as fresh berries, whipped cream, or maple syrup.
