1 egg
100 ml milk
4 tablespoons all-purpose flour

1 small apple , peeled and shredded
2 1/2 tablespoons all-purpose flour
2 1/2 cups of water from the meatballs

Instructions

1.Combine ground pork, ground turkey, salt, shallot, black pepper, egg, and milk in a bowl. Mix well.
2.Form the mixture into small meatballs.
3.Coat the meatballs with all-purpose flour.
4.Boil a pot of water with coarse salt and optional celery tops.
5.Add the meatballs to the pot and cook for 10-12 minutes.
6.Remove the meatballs from the pot and reserve 2 1/2 cups of the cooking water.
7.Melt butter in a pan and sauté chopped shallot until translucent.
8.Add curry and apple to the pan and stir for a minute.
9.Sprinkle 2 1/2 tablespoons of flour over the pan and stir well.
10.Gradually pour in the reserved cooking water while stirring.
11.Add tarragon and simmer for 5 minutes.
12.Add the meatballs to the pan and heat through. Serve hot.
