1 1/2 lbs potatoes , peeled and cubed
1 1/2 cups sliced carrots
1 cup chopped leek
1 cup sliced celery
3 garlic cloves , minced
1/2 teaspoon ground black pepper
1/2 teaspoon nutmeg , freshly ground
3/4 cup quick-cooking rolled oats
4 cups coarsely chopped fresh kale
1 tablespoon snipped fresh thyme

Instructions

4.Cover and cook on high heat for an additional 30-40 minutes, or until the kale is tender.
