Ingredients

1 calf 's head , split in two , brains , eyes & ears removed before scrubbing well with a stiff brush , reserve the tong
water
salt
1 bouquet garni
4 ounces butter
4 medium onions , sliced
1 celery root , peeled & cubes
2 leeks , white parts only , sliced
4 carrots , sliced
2 ounces butter
4 tablespoons flour
paprika , to taste
lemon juice , to taste
2/3 cup madeira wine
10 ounces fish balls
10 ounces meatballs ( Danish `` Fars '' )
6 hard-boiled eggs , cut length wise in half , but kept warm until serving
Forloren Skilpadde, or 'mock turtle soup', is a traditional Danish dish that dates back to the 18th century. The name comes from the resemblance of calf's head meat to turtle meat, which was a luxury ingredient at the time. Today, this hearty soup is still enjoyed in Denmark and is a unique way to incorporate calf's head into your diet. Instructions

1.In a large pot, add the calf's head and enough water to cover it.
2.Add salt and bouquet garni.
3.Bring to a boil and skim the surface.
4.Turn down to a simmer and cook until the meat is tender, about 3-4 hours.
5.Remove the calf's head from the broth and let it cool.
6.Once cooled, discard the bones and chop the meat into small pieces.
7.In a separate pot, melt butter and add onions, celery root, leeks, and carrots. Cook on low until the vegetables are soft and tender, about 15 minutes.
8.In another pot, melt butter and whisk in flour until it forms a paste.
9.Slowly add the calf's head broth to the pot while whisking constantly to prevent any lumps from forming.
10.Add the vegetable mixture and meat to the pot and stir.
11.Add paprika and lemon juice to taste.
12.Add madeira wine and let simmer for 15 minutes.
13.In a separate pot, cook fish balls and meatballs according to package instructions.
14.To serve, place two halves of a hard-boiled egg in each bowl and ladle the soup over the eggs.
