Ingredients

1 package dry yeast
1/4 cup warm water
1 cup small curd cottage cheese
2 tablespoons sugar
1 tablespoon minced onion
1 tablespoon melted butter
2 tablespoons dill or 2 tablespoons caraway seeds
1 teaspoon salt
1/4 teaspoon baking soda
1 unbeaten egg
2 1/4 - 2 1/2 cups all-purpose flour
This Danish Dill or Caraway bread is perfect for a light snack or as a side to a meal. The fresh flavor of dill or the earthy taste of caraway blend perfectly with the tanginess of the cottage cheese in this bread. This recipe requires a bit of patience with the rising dough but the end result is worth it. Enjoy a slice warm from the oven or toast it to use as a sandwich bread.

Instructions

1.Dissolve dry yeast in warm water.
2.In a large mixing bowl, combine cottage cheese, sugar, onion, butter, dill or caraway seeds, salt and baking soda. Stir in yeast mixture.
3.Beat in egg.
4.Gradually mix in enough flour to make a stiff dough.
5.Kneed on floured surface for 5-6 minutes or until smooth and elastic.
6.Place dough in greased bowl, turning once to grease top.
7.Cover and let rise in a warm place until doubled in size, about 1 hour.
8.Punch down and shape into a loaf.
9.Place in greased loaf pan.
10.Cover and let rise until doubled in size again, about 30 minutes.
11.Preheat oven to 350 degrees.
12.Bake for 35-40 minutes or until bread sounds hollow when tapped.
13.Remove from pan and cool on wire rack.
