1 package dry yeast | |
1/4 cup warm water | |
1 cup small curd cottage cheese | |
2 tablespoons sugar | |
1 tablespoon minced onion | |
1 tablespoon melted butter | |
2 tablespoons dill or 2 tablespoons caraway seeds | |
1 teaspoon salt | |
1/4 teaspoon baking soda | |
1 unbeaten egg | |
2 1/4 - 2 1/2 cups all-purpose flour |
1. | Dissolve dry yeast in warm water. |
2. | In a large mixing bowl, combine cottage cheese, sugar, onion, butter, dill or caraway seeds, salt and baking soda. Stir in yeast mixture. |
3. | Beat in egg. |
4. | Gradually mix in enough flour to make a stiff dough. |
5. | Kneed on floured surface for 5-6 minutes or until smooth and elastic. |
6. | Place dough in greased bowl, turning once to grease top. |
7. | Cover and let rise in a warm place until doubled in size, about 1 hour. |
8. | Punch down and shape into a loaf. |
9. | Place in greased loaf pan. |
10. | Cover and let rise until doubled in size again, about 30 minutes. |
11. | Preheat oven to 350 degrees. |
12. | Bake for 35-40 minutes or until bread sounds hollow when tapped. |
13. | Remove from pan and cool on wire rack. |
