5 ounces cream cheese , room temperature
1 tablespoon instant coffee
1 tablespoon powdered sugar

1 3/4 cups unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup sour cream
1/2 cup sugar
1 teaspoon vanilla
These Danish Coffee Cream Puff Muffins are a delightful twist on a classic pastry. Instructions

1.Preheat the oven to 375 degrees F.
2.In a medium bowl, beat together cream cheese, instant coffee, powdered sugar, and ground chocolate until fluffy and smooth. Set aside.
3.In a large bowl, sift together flour, baking powder, baking soda, and salt.
4.In another bowl, whisk eggs, sour cream, sugar, and vanilla until smooth.
5.Add egg mixture to the flour mixture and stir until just combined.
6.Fold in the cream cheese mixture.
7.Fill greased muffin cups 2/3 full with batter.
8.Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
9.Cool muffins for 5 minutes before removing from the pan.
10.Serve warm or at room temperature.
