Ingredients

6 cups whole milk
1 cup cooked white rice , medium grain
1/2 cup sugar
1/2 teaspoon salt
2 whole eggs , lightly beaten
cinnamon
nutmeg
1 whole almonds
1 tablespoon real vanilla extract or 1 split vanilla bean
2 cinnamon sticks
Warm and creamy Danish Christmas Rice Pudding is a popular Nordic dessert that is traditionally eaten on Christmas Eve. Instructions

1.In a thick bottomed pot, combine cooked rice, milk, sugar, salt, and cinnamon sticks. Mix well.
2.Place on medium heat and occasionally stir until milk comes to a boil.
3.Lower the head to low and let it simmer for 60-70 minutes or until the mixture has reduced and thickened. Stir occasionally.
4.Remove the cinnamon sticks and add beaten eggs, vanilla, and nutmeg. Mix well.
5.Place the pot back on the low heat and continue stirring until the mixture thickens again. It takes about 5-10 more minutes.
6.Remove from heat and let it cool down for a couple of minutes.
7.Serve in small bowls or ramekins with one whole almond in each serving, and sprinkle with cinnamon.
