Ingredients

1 cup granulated sugar
1/4 cup boiling water
2 cups cream , scalded
1/4 cup sugar
6 eggs , separated
1 teaspoon vanilla
2 tablespoons cognac
1 cup heavy cream

Instructions

1.Preheat oven to 325°F.
2.In a saucepan, cook 1 cup of granulated sugar over medium heat until melted and golden brown. Add 1/4 cup boiling water and stir until smooth. Pour the caramelized sugar into a baking dish and let it cool.
3.In a saucepan, scald 2 cups of cream with 1/4 cup of sugar. Let it cool.
4.Beat 6 egg yolks until thick and lemon-colored. Gradually add the cooled cream and mix well. Stir in 1 teaspoon vanilla and 2 tablespoons cognac.
5.In a separate bowl, beat 6 egg whites until stiff but not dry. Gradually fold in the egg yolk mixture.

7.Place the baking dish in another pan and add hot water to the pan to a depth of 1 inch.
8.Bake in preheated oven for about 1 hour or until set.
