12 eggs , separated
1 cup sugar
1 quart light cream
2 teaspoons vanilla

Instructions

1.Preheat your oven to 350F.
2.In a saucepan, melt brown sugar over medium heat until it caramelizes.
3.Pour the caramel in a baking dish and spread it evenly.
4.In a large mixing bowl, whisk the egg yolks, sugar, and vanilla together until creamy.
5.In a separate bowl, beat the egg whites until they form stiff peaks.
6.Add the light cream to the egg yolk mixture and mix until well combined.
7.Fold in the egg whites.
8.Pour the mixture over the caramel.
9.Place the baking dish in a larger, deep baking dish, and fill the larger dish with hot water halfway up.
10.Bake for 60-70 minutes or until the custard is set.
11.Remove from the oven and let it cool down.
12.Refrigerate for at least 2 hours before serving.
