Ingredients

3 egg yolks
1/2 cup sugar
3/4 cup white wine
1 tablespoon cognac

Instructions

1.Whisk the egg yolks and sugar together in a heat-proof bowl.
2.Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.
3.Pour the white wine and cognac into the bowl and whisk continuously until the mixture thickens.
4.Once the sauce coats the back of a spoon, remove the bowl from the heat and continue whisking for another minute.
5.Serve immediately or store in the refrigerator for up to 3 days.
