Ingredients

1 package frozen raspberries , thawed
1 package frozen strawberries , thawed
1/4 cup cornstarch
2 tablespoons granulated sugar
1/2 cup cold water
1 tablespoon lemon juice
slivered almonds
Rødgrød is a traditional Danish dessert that is typically served during the summer months when fresh berries are in season. Its name literally translates to 'red porridge' and it is made by simmering a combination of berries with sugar and cornstarch until it thickens to a pudding-like consistency. The resulting dessert is a vibrant red color and has a refreshing, fruity flavor that is perfect for warm weather. Rødgrød is often served with a dollop of whipped cream or a scoop of vanilla ice cream to balance out its tartness.

Instructions

1.In a medium-sized saucepan, combine the thawed raspberries and strawberries.
2.In a small bowl, whisk together the cornstarch and granulated sugar.
3.Gradually stir in the cold water until smooth.
4.Pour the cornstarch mixture into the saucepan with the berries and stir to combine.
5.Heat the mixture over medium-high heat, stirring constantly, until it comes to a boil.
6.Reduce the heat to low and continue to cook, stirring occasionally, for 5-10 minutes or until the mixture has thickened to a pudding-like consistency.
7.Remove the pudding from the heat and stir in the lemon juice.
8.Allow the pudding to cool to room temperature before transferring it to a container and refrigerating until chilled.
9.To serve, spoon the pudding into bowls and top with slivered almonds.
