2/3 cup butter
1 1/4 cups sugar
3 eggs
1/2 cup blanched almond , finely ground
1/2 teaspoon almond extract
1/8 teaspoon ground cinnamon
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 cup blanched almond , coarsely chopped

Instructions

1.Preheat the oven to 350°F.
2.Cream the butter with the sugar until light and fluffy.
3.Beat in the eggs, one at a time.
4.Add the finely ground almonds, almond extract, and cinnamon. Beat well.
5.Sift together the flour and baking powder. Stir into the creamed mixture until smooth.
6.Fold in the coarsely chopped almonds.
7.Spoon the batter into a greased and floured 9-inch loaf pan and smooth the top.
8.Bake for 45-50 minutes or until a toothpick inserted in the center of the cake comes out clean.
9.Allow to cool in the pan for 10 minutes.
10.Remove to a wire rack to cool completely.
